The grapes come from vines averaging 30 years old, harvested by hand, with a reported average yield of 40 hl/ha. Vinification combines traditional open-vat fermentation and complete malolactic fermentation, followed by 10 to 12 months of aging in French oak barrels from the Louis Latour cooperage, of which 20% are new oak.
