From the Middle Ages to the 19th century, France's wine-growing regions were renowned for their expertise in oenology and their massive production of wine. And even though the production of this beverage has developed all over the world, France can still boast regions renowned for their viticulture. Some of them are large estates, but small properties like Jean Yves Bizot 's also stand out thanks to the exceptional quality of their wines. In this article, we're going to take a dive into the heart of the Jean Yves Bizot estate to see the characteristics of its cuvée.

Presentation of the Jean-Yves Bizot estate and its wine-making process


Domaine Jean-Yves Bizot is a small estate with 1ha 70ca of vines, located in Vosne-Romanée in the Côte d'Or department in Burgundy. The owner, Jean-Yves Bizot, inherited the estate from his grandfather, who was a surgeon at Beaune hospital, and from his father, a paediatrician. At the time of his grandfather's death, the estate still covered 8 hectares, but as the inheritance progressed, it was reduced to 3.5 hectares, part of the estate having been taken over by the Coudray-Bizot and Nadef estates. When Jean-Yves Bizot, a geologist by profession who had studied oenology, arrived at the estate in 1995, he took over the family's 2.50 hectares of vines. He then implemented strategies to obtain even limited yields.
In doing so, he began by studying his terroir to better determine the expression of wine he wanted to achieve. His choice fell on subtle, pure, smooth and elegant notes, in other words, wines of remarkable quality. His reflections led him to adopt integrated farming methods, starting with organic viticulture and reducing the amount of SO2 used in vinification. He also decided to put grass under the vines, to choose short pruning and to make a meticulous selection of ripe vines when picking.
In fact, Jean-Yves Bizot 's winemaking is very simple, with almost no mechanical intervention and no inputs. First of all, the grapes are not destemmed when they arrive in the winery. They are crushed before being fermented for 5 or 6 days in vats. The estate uses the pigeage technique to encourage maceration. Next comes the pressing and decanting stage, during which the wines are placed in new barrels. The wines remain in these barrels for a dozen or twenty days, depending on the vintage and without the addition of external yeasts, before being decanted using a bucket. There is no pump in the cellar. The wines are then aged for 15 to 20 months. After ageing, they are bottled without racking but with the addition of a minimum of sulphite. The wine is bottled barrel by barrel, without filtration.
Bizot wines needed time to win over consumers and establish a solid base of loyal customers in France and abroad. Indeed, at first, customers used to explosive, dense and tight wines took time to adapt to his style of wine. But once they had tasted his Pinot Rouge wines, their appreciation of Burgundy changed radically

A tiny estate with wines of rare beauty


Domaine Bizot produces mainly red wines from its plots in Echézeaux, but it also makes a few white wines from its plots in Vosne Romanée and Magny-lès-Villiers. For the record, in 2019, some of his bottles of rare grands crus, much appreciated by connoisseurs, went up for auction on Idealwine at a price of €5,035. But on this site, you can find wines of equally high quality at more affordable prices.

A great 100% Pinot Noir wine that combines minerality, freshness and the ability to age for several years. It has a garnet-red colour and a lovely, medium-bodied nose that is both sweet and feminine, with red cherry, vanilla, nutmeg and mushroom aromas. On the palate, it has fine tannins, notes of deep fruit, a hint of leather and medium acidity. It all adds up to a long, elegant, creamy finish. This is a bottle you can drink on its own, unaccompanied, because of its unforgettable flavours. But you can also accompany it with dishes in Chinese sauce, dark-fleshed fish such as salmon or tuna, or white meat dishes.
