Les Parcellaires de Saulx Gevrey Chambertin Les Evocelles 2021 Bouteille (75cl)
Les Parcellaires de Saulx Les Evocelles 2021 is a Village-classified red Burgundy wine, made exclusively from Pinot Noir. This parcel-specific cuvée highlights the lieu-dit Les Evocelles. For this cuvée, the estate indicates a 12 to 15-month ageing period in barrels that have already been used once, a method that supports a long and balanced expression of Pinot Noir.

Les Parcellaires de Saulx
Les Parcellaires de Saulx is a wine estate established in Meursault, created in 2017 on the foundations of a century-old négociant house. It vinifies and matures small Burgundian cuvées from a single origin, often a single plot, without blending different sources. Its range covers the Côte de Beaune and the Côte de Nuits, from regional appellations to grands crus.

Histoire du domaine
A wine house has been located on this Meursault site since the early 20th century. Initially owned by Monsieur Garnier, it was acquired in March 1954 by the Société de Diffusion et de Vente des Grands Vins, which later became Le Manoir Murisaltien. A Swiss family took over the company in 1995 before selling it in May 2017 to the American couple Denise Dupré and Mark Nunnelly, in partnership with director Jean-Luc Vitoux. Les Parcellaires de Saulx was created in September 2017 and is part of the same group of properties as Champagne Leclerc Briant, Domaine Belleville in Rully, and Château de la Commaraine in Pommard. The house maintains a parcel-by-parcel micro-négociant structure: it selects grapes, musts, or wines from partner winegrowers, then handles vinification and aging in its historic cellars spanning over 1,500 m². The first commercially released wines correspond to the 2015 and 2016 vintages depending on the appellations. In July 2022, the renovation of the building and the creation of the Manoir des Parcellaires de Saulx were completed. Since early 2023, the house has also farmed a plot located in the Meursault climat "Le Pré de Manche"; its exact surface area is not published by the sources consulted.
Les Evocelles (Gevrey Chambertin)
Les Évocelles is a climat of the Gevrey-Chambertin appellation located primarily in the commune of Brochon, at the northern end of the appellation and at the top of the slope. It holds Village status, despite its proximity to the premier crus Les Champeaux and Les Goulots. The site is described as steep or terraced, with an orientation ranging according to sources between east and south-east. Pedological descriptions indicate calcareous soils containing silt or clayey silt; another source mentions brown calcic soils on a marly subsoil.
- Vineyard commune
- Brochon
- Origin of the vineyard name
- Uncertain etymology: "Évocelles" is linked either to the Old French "Vaucelle", meaning a small valley, or to "Brosselles", meaning scrubby land.
- Exposure
- East to south-east
- Slope
- Sloping hillside, locally terraced
- Soil
- Calcareous soils; silt to clayey silt on the surface, sometimes described as brown calcic soils
- Subsoil and geology
- Deep silt and marly substrate; reported presence of crinoidal limestone (calcaire à entroques) and marl with Ostrea
Histoire de la parcelle
The climat belongs to the Brochon sector authorized to produce under the Gevrey-Chambertin appellation. Vestiges of old walls and stone mounds (murgers) bear witness to the clearing and gradual cultivation of the hillside. However, consulted sources propose two competing origins for its name, without historically deciding between "Vaucelle" and "Brosselles".
