Histoire du domaine
The Defaix family claims a winemaking presence dating back to 1610 and operates the Domaine du Vieux Château, whose history spans eight centuries. A document from the estate links its ancestors from the 16th and 17th centuries to the Château de Faix in the Avallonnais region, and then places the settlement of Étienne-Paul Du Jer de la Croix de Faix in the Chablis region in the 18th century. Daniel-Étienne Defaix took over the business in 1978 and developed a method that goes against the current of quick releases to the market: the wines remain on fine lees for several years before commercialization. He also developed wine tourism hospitality in Chablis starting in 1985. Paul-Étienne Defaix, representing the next family generation, returned to the estate after his studies in Beaune; he vinified his first vintage in 2014 and now oversees vineyard management and vinification, while Daniel-Étienne remains involved in the business.
Grenouilles
Grenouilles is an officially recognized climat of the Chablis Grand Cru appellation, located in the commune of Chablis on the right bank of the Serein river. With 9.38 hectares as indicated by the BIVB, it is the smallest of the seven official climats of the Grand Cru. Close to the river, it benefits from its moderating effect and a south to south-westerly exposure favorable to ripening. Its clayey, lean, stony, and well-drained soil rests on Kimmeridgian limestone marl.

Histoire de la parcelle
The toponym is documented as early as 1321 under the spellings 'grenoille' or 'gernouille'. Grenouilles is among the Chablis growths cited in 19th-century wine literature, and was later designated by producers as 'grands crus classés' in the early 20th century. The Chablis Grand Cru appellation was recognized by decree on January 13, 1938, and Grenouilles is today one of its seven officially authorized climat names.
