Ulysse Collin
Ulysse Collin is a Champagne estate based in Congy, in the Coteaux du Petit Morin, south of the Côte des Blancs. Olivier Collin produces single-vineyard and single-varietal champagnes there from Chardonnay and Pinot Noir, with winemaking and ageing in oak. The family vineyard, whose history of winegrowing and cooperage dates back to 1812, covers 8.7 hectares.

Histoire du domaine
The Collin family has been based in Congy as winegrowers and coopers since 1812. In 1987, Olivier Collin’s father sold the business and leased the vineyards and the family’s facilities to a major Champagne house, bringing an end to independent production. After training in viticulture and an internship with Anselme Selosse, Olivier Collin reclaimed 4.5 hectares of vines in 2003. The 2003 harvest, affected by frost, was then sold in its entirety. He produced his first wines in 2004, notably from the Pierrières plot in Vert-Toulon. In 2005, he acquired a further 4.2 hectares, along with the historic Coquard press and the estate’s cellars. The EARL adopted the name Ulysse Collin in 2007. From the outset, Olivier Collin developed a production programme based on single-plot and single-varietal wines, vinified and matured in oak. The articles of association, updated following the extraordinary general meeting of 31 October 2023, state that Olivier Collin holds 749 of the EARL’s 750 shares, with Sandra Zaragoza holding the remaining share. Olivier Collin remains the managing partner and is directly responsible for the winemaking process.
Les Roises
Les Roises is a single-plot Blanc de Blancs Champagne made from Chardonnay originating from the eponymous plot in Congy. This cuvée is vinified and aged in oak barrels, followed by extended aging on the lees. It stands out from the estate's other wines through the unique expression of this site and a generally ample, vinous profile.

Histoire de la cuvée
First commercialized starting with the 2008 harvest, Les Roises is part of Olivier Collin's approach to bottling his different terroirs separately. It comes from one of two neighboring Chardonnay plots, Les Roises and Les Enfers, located in his village of Congy. Its lees aging, initially shorter, was subsequently extended depending on the market releases.
