In 2022, Domaine François Carillon releases a white Puligny-Montrachet Premier Cru from the Les Folatières climat in Burgundy. This wine is made from Chardonnay and holds the Burgundy Premier Cru classification. For this cuvée, the estate indicates a clay-limestone soil and aging that includes 22% new oak barrels: the wine spends one year in barrel, followed by seven months in a blending vat. The announced profile combines a floral expression, white and yellow-fleshed fruits, and a mineral framework.

Histoire du domaine
The Carillon family has been documented in Puligny-Montrachet since the 16th century: records mention Jean Carillon and his winemaking activity as early as 1520, while the year 1611, engraved on a stone in a family cellar, is featured today in the estate's identity. Following the phylloxera crisis, Prosper and Jeanne Carillon temporarily left the village to work in Chartres before returning; the vineyard was replanted after the First World War. In the 1960s, Louis Carillon gradually abandoned mixed farming and livestock to specialize in viticulture, primarily with Chardonnay. François Carillon took charge of the family vines starting in 1988 and worked alongside his father Louis and his brother Jacques. Following their final joint vintage in 2009, the Domaine Louis Carillon was divided between the two brothers: François established his own estate in 2010, initially comprising about 6.5 hectares. The operation has since expanded to over 16 hectares. François Carillon remains at the head of the estate, passing on his expertise to his four children.
Les Folatières
Les Folatières is a climat officially classified as a Premier Cru of the Puligny-Montrachet appellation, in the commune of the same name. Its regulatory perimeter brings together the lieux-dits Es Folatières, En la Richarde dit Les Folatières, Peux Bois dit Les Folatières, and Au Chaniot dit Les Folatières. It occupies a central position on the mid-slope and features limestone, stony soils, notably mixing ochre earth and stones. The orientations and altitudes published often concern the entire appellation or specific plots of producers and are therefore not retained here as exact values for the entire climat.

Histoire de la parcelle
Les Folatières appeared under the form "Es Follatières" among the climats of Puligny studied by Jules Lavalle in 1855, who placed it in the second cuvée. The climat is today registered in the specifications of Puligny-Montrachet among the denominations that can accompany the Premier Cru mention; the specific plot area of the premiers crus was approved by the INAO on May 17 and 18, 1984.
