Lamy Caillat
Created in Chassagne-Montrachet by Florence Lamy and Sébastien Caillat, Lamy-Caillat is a micro-estate exclusively dedicated to Chardonnay white wines. Today, it produces seven cuvées from Chassagne-Montrachet, Saint-Aubin, and the Bourgogne appellation, utilizing mechanical pressing, aging of at least two years in a cold cellar, and manual bottling without filtration.

Histoire du domaine
Florence Lamy grew up between Chassagne-Montrachet and Saint-Aubin within the family of the Domaine Lamy-Pillot, while Sébastien Caillat moved closer to the profession of winemaker before joining his wife's family estate. In 2008, elderly neighbors rented out about one hectare of vines to them under a farm lease, including several renowned parcels in Chassagne-Montrachet. The 2008 and 2009 vintages were initially vinified in the facilities of Lamy-Pillot under the name Lamy-Caillat; the first vintage entirely crafted in their separate cellar was 2012. The historical core comprised four wines: Chassagne-Montrachet Pot Bois and the premier crus La Romanée, Les Caillerets, and Les Champs Gains, for a then-documented area of about 1.2 hectares. The estate's current lineup features seven white wines, with the addition of La Grande Montagne, Saint-Aubin En l’Ebaupin, and Bourgogne Les Grandes Corvées. However, the total surface area and annual production corresponding to this expanded range are not published in a sufficiently precise and current manner.
