Histoire du domaine

The estate traces its origins back to 1948, when François Raveneau married Andrée Dauvissat and brought together the vineyards of both families. At that time, the couple practised mixed farming, as did many families in Chablis. François Raveneau became the first member of his family to produce and bottle his own wines. In the 1960s and 1970s, the estate expanded, against a backdrop of technical advances that, in particular, provided better protection against spring frosts. François Raveneau then devoted himself entirely to viticulture and acquired plots of land, including some in the Chablis grands crus. His son Jean-Marie joined the estate in 1978 after completing his studies. Bernard Raveneau, after gaining experience in the Burgundian wine trade, in turn joined his brother in 1995, when François retired. Isabelle Raveneau joined the estate in 2010, followed by Maxime Raveneau in 2017. Isabelle and Maxime Raveneau now run the family estate; Isabelle is responsible for winemaking, within an organisation where family members also help with work in the cellar and the vineyards. The estate vinifies grapes from its own vineyards and harvests them by hand; the wines are aged in barrels before bottling.

Les Butteaux

Butteaux is an officially recognized climat for the Chablis Premier Cru denomination, attached to the umbrella climat Montmains, along with Forêts. Located in the upper part of the slope above Forêts, it features south-east facing, well-ventilated slopes that create a relatively cool microclimate. The surface soils combine white and blue clays with large stones that promote drainage; the subsoil consists of Kimmeridgian marls, often shallow and locally in the form of large blocks.

Origin of the vineyard name
The interprofession favors the local explanation derived from "butte" (knoll), the upper part of a hill. It also mentions, without considering them certain, the hypotheses of a settled place or an origin linked to the German dialect word "but", meaning "stump" and evoking a cleared forest.

Histoire de la parcelle

Butteaux is among the climats classified as Premier Cru in accordance with the provisions of the decree of January 13, 1938. Its regulatory provenance was subsequently precisely attached to the parcel area of Chablis Premier Cru delimited by the INAO in 1978; the consolidated classification text notably cites the cadastral localities Les Bouts des Butteaux and Le Milieu des Butteaux. In the current organization of Chablis climats, Butteaux can be marketed under its own name or under that of the umbrella climat Montmains.

I drank most of my bottles of Raveneau's 2011 Chablis 1er Cru Butteaux too young, and more fool me, as the wine is now really hitting its stride. Offering up aromas of oyster shell, citrus oil and beeswax, the slightly herbal notes that betrayed the vintage in its youth have been transformed into scents of warm hay as this Butteaux reaches maturity. Medium to full-bodied, satiny and layered, with chalky structure and impeccable balance, it concludes with an impressively long, penetrating finish.
