Histoire du domaine
The Lamy family has been established in the Saint-Aubin vineyards since 1640. Hubert Lamy founded the estate under his own name in 1973. In the 1990s, the estate expanded through the purchase, lease and planting of new plots. Some of the vines were then replanted with Chardonnay in areas considered more favourable to this grape variety. Olivier Lamy joined the family estate in 1995, after studying oenology and gaining experience at other estates. He now runs the estate with his wife Karine, who is responsible for management, marketing and accounts. The vineyard now covers 18.5 hectares, mainly in Saint-Aubin, with plots also located in Puligny-Montrachet, Chassagne-Montrachet and Santenay. Olivier Lamy oversees the vineyard work and winemaking, with each plot being vinified and then matured separately. Both the white and red wines are bottled after 24 months’ ageing, depending on the estate’s website.
Haute Densité
"Haute Densité" identifies several distinct cuvées from the estate, notably Derrière chez Edouard, Les Tremblots, and Criots-Bâtard-Montrachet. They originate from sections of their respective climats planted or replanted at a density higher than the Burgundian norm and vinified separately. Therefore, this represents a family of parcel cuvées rather than the name of a single plot or appellation.
- Origin of the cuvée name
- The term "Haute Densité" refers to the exceptionally high planting density of the separately vinified vine sections.
- Cuvée creation year
- 2006
- Style of the cuvée
- White wines generally characterized by high concentration of extract, a pronounced mineral structure, vibrant acidity, and great length, while maintaining precision and balance. Their exact expression remains tied to their climat of origin.
- Position within the range
- Rare and prestigious micro-cuvées, positioned at the very pinnacle of the estate's white wine range.
Histoire de la cuvée
Olivier Lamy initiated his first high-density planting trials in Derrière chez Edouard in the early 2000s, drawing inspiration from the planting densities practiced in Burgundy before phylloxera. A professional vertical tasting documents Derrière chez Edouard Haute Densité starting from the 2006 vintage. The principle was subsequently applied to sections of Les Tremblots and Criots-Bâtard-Montrachet, resulting in separate bottlings bearing the same designation.
Criots-Bâtard-Montrachet
A very small climat in the Côte de Beaune, exclusively located in Chassagne-Montrachet. It forms the production area for the AOC Criots-Bâtard-Montrachet, reserved for white wines made exclusively from Chardonnay. Its productive surface area was 1.57 ha in 2022.
