Carole Bouquet's Sangue d'Oro 2017 is a Sicilian Passito di Pantelleria made from 100% Zibibbo (Muscat of Alexandria). This cuvée expresses the passito tradition of the island of Pantelleria through the natural sun- and wind-drying of the grapes. For Sangue d'Oro, the estate describes three harvest passes: grapes intended to dry for 30 to 40 days, then 10 to 15 days, prior to a harvest of fresh grapes in September. The passito grapes are then blended with the fresh grapes and macerated on their skins for roughly 48 to 72 hours.
