La Chablisienne Chablis Les Preuses Grand Cru 2012 Bouteille (75cl)
La Chablisienne Chablis Les Preuses Grand Cru 2012 is a white Burgundy wine from the Les Preuses parcel in the Chablis Grand Cru appellation. Produced exclusively from Chardonnay, it is classified as a Burgundy Grand Cru. The Wine Advocate awards it 90/100, describing an ethereal bouquet marked by apple blossom, linden flower, flint, and a touch of peach. The balanced palate pairs a slightly honeyed attack with a clean acidity, leading to a full and concentrated finish.

La Chablisienne
Founded in Chablis in 1923, La Chablisienne is the sole cooperative winery in the Chablis vineyard region, bringing together nearly 250 winegrowers across approximately 1,200 hectares. It produces around thirty cuvées covering the four Chablis appellations, using musts pressed close to the plots and then vinified in its own facilities. Its heritage notably includes Château Grenouilles, within the Chablis Grand Cru Grenouilles climat.

Histoire du domaine
La Chablisienne was established in 1923 at the initiative of Abbé Balitrand, parish priest of Poinchy and a small vineyard owner, against a difficult economic backdrop for Chablis winegrowers. In its very first year, the cooperative brought together 180 members representing nearly 200 hectares. Originally, it primarily pooled commercialization: until the mid-1950s, members delivered already-made wines, which the winery blended and sold mainly to the wine trade. Starting in 1947, it progressively acquired vinification tools, then chose to receive harvests as musts in order to directly oversee fermentations and better connect each wine to its plot origin. The brand gained particular renown from the 1990s onward. Since 1999, La Chablisienne has also owned Château Grenouilles, located at the foot of the Grand Cru Grenouilles climat. Estelle Roy joined the team in 2019, working for four years alongside oenologist Vincent Bartement, before succeeding him in May 2023 to take charge of the tank room team and vinifications.
Preuses
Preuses is one of the seven official climats that can complete the name of the Chablis Grand Cru AOP. It occupies the upper part of the hillside on the right bank of the Serein, between Bougros and Vaudésir, in the commune of Chablis. The site faces south to southwest and predominantly features brown clay-limestone soils, with localized thin white clays. Kimmeridgian geology is documented for the entire Grand Crus hillside, but not specifically detailed for the entire surface of Preuses in the official climat data sheet.

Histoire de la parcelle
An ancient Roman road known as the "voie pierreuse" ran alongside the climat and is believed to be the origin of its name. The climats recognized today within Chablis Grand Cru are cited in wine literature as early as the 19th century and were classified as "grands crus classés" by producers from the early 20th century. The Chablis Grand Cru appellation was officially recognized on January 13, 1938.
