Mito INOUE
Originally from the Kagoshima region, Mito Inoue produces a confidential output in Montaigut-le-Blanc, Auvergne, from less than one hectare spread across two plots. She vinifies one to two barrels herself depending on the vintage, mainly from Gamay, with Vin de France cuvées such as Vespertine. Since 2015, her work in the vineyard has excluded sulfur and copper.

Histoire du domaine
Mito Inoue arrived in France in 2003 following an initial professional experience in Tokyo and first settled in the Paris region. Her winemaking trajectory began in 2008 alongside Pierre Beauger, whose wines had deeply moved her upon discovery. Starting in 2009, she continued her apprenticeship with several French winemakers, notably Gilles Azzoni, Alain Castex, Anne-Marie Lavaysse, and Michel Augé. She established herself in Auvergne, in Montaigut-le-Blanc, in 2011 and vinified her first wines there, although she initially did not expect to make winemaking her profession. Her estate remains particularly small, with just under one hectare shared between two plots and a variable production of one or two barrels per year. Her first documented cuvées include Mitologie and Chicci in 2011, Plume in 2012, Froufrou in 2013, Vespertine in 2014, and Orbs in 2016.
