Les Horées
Les Horées is a Burgundian wine estate and micro-negociant founded by Catharina and Guilhem Sadde, based in Beaune. Catharina Sadde manages the vineyards and winemaking using an uncertified organic and biodynamic approach, featuring native yeast fermentations, measured use of sulfur, and a variable proportion of whole clusters for the reds. The estate works its own parcels and completes its range with grapes purchased from long-term partner growers.

Histoire du domaine
Of German origin and initially trained as a chef, Catharina Sadde turned to wine after a harvest experience in the Nahe region. She studied viticulture and oenology in Geisenheim and Montpellier, then trained at several Burgundian estates, notably Domaine de la Romanée-Conti, Comte Armand, Domaine Comte Georges de Vogüé, Marquis d'Angerville, and Cécile Tremblay. She met Guilhem Sadde, then an auctioneer, in 2010 during an internship at Pablo Chevrot. The couple founded Les Horées in 2019 and produced their first vintage that year, representing around 7,000 bottles. Initially located in rented premises in Pommard, the estate later transferred its production to a larger winery in Beaune. The project combines winegrowing ownership and micro-negociant activity: Catharina Sadde recently stated that she farms 4.1 hectares and has established lasting relationships with several grape suppliers. The name Les Horées refers to the Horae of Greek mythology, deities associated with the rhythm and changing of the seasons.
Des Six Ifs
"Des Six Ifs" is a distinct Pinot Noir cuvée produced by Les Horées under the Bourgogne rouge appellation. Created in 2022, it initially combined grapes from the Mâconnais and the lieu-dit Les Boutières in Savigny-lès-Beaune. Its geographical composition later evolved to focus exclusively on Les Boutières.
- Origin of the cuvée name
- Phonetic play on words between "Des Six Ifs" (literally a group of six yew trees) and "des saucisses" (sausages) in French.
- Cuvée creation year
- 2022
- Style of the cuvée
- A Bourgogne rouge made from Pinot Noir that seeks greater concentration, density, and tannic structure than the more ethereal expressions in the lineup.
- Position within the range
- A structured regional Bourgogne rouge, positioned among the entry-level appellation cuvées in the Les Horées range.
Histoire de la cuvée
The cuvée made its first appearance with the 2022 vintage, composed half of grapes from the Mâconnais and half of Pinot Noir from Les Boutières in Savigny-lès-Beaune. As of 2023, Les Horées acquired a second parcel in Les Boutières and discontinued the use of grapes from the Mâconnais for this cuvée.
