Histoire du domaine

Asahara Shuzo was founded in 1882 by Zenjiro Asahara. Born near Lake Biwa, he began an apprenticeship at a sake brewery in Ome at the age of nine, before establishing his own house in Moroyama at the age of 29. The name Biwa no Sasanami, which has become one of the producer's emblematic brands, refers to his origins and to a poem in which he expressed the hope that a well-liked sake would be passed from person to person like a growing ripple. The house has remained linked to the Asahara family for five generations, and its current representative is Kenichi Asahara. From the late 20th century onwards, it heavily diversified its production beyond sake, notably toward liqueurs made with local fruits, shochu, wine, and beer. In March 2011, a fire destroyed the headquarters warehouse and caused the loss of approximately one-third of the sake then in production; a published source from the same year indicated that sake production was temporarily organized in Nagaoka, in Niigata Prefecture, while other beverages were produced in Ogose. No current, verifiable bottle production figures, farmed agricultural surfaces, or names of active cellar masters or toji have been publicly identified.
