Domaine Bitouzet Prieur
Based in Volnay, Domaine Bitouzet-Prieur brings together the heritage of the Bitouzets, originally from Volnay, and that of the Prieurs from Meursault. François Bitouzet currently manages 13 hectares spread notably across Volnay, Meursault, Puligny-Montrachet, and Beaune, with production combining Pinot Noir and Chardonnay. Herbicide-free farming, organic cultivation, and manual harvesting accompany winemaking attentive to the identity of each climat.

Histoire du domaine
The name Bitouzet-Prieur stems from the union of two winemaking families: the Bitouzets on the paternal side, established in Volnay, and the Prieurs on the maternal side, originally from Meursault. Representing the sixth generation, François Bitouzet joined the family estate in 2005 and took sole charge in 2012, after participating in winemaking starting in 2008. His father, Vincent Bitouzet, had abandoned herbicides and products harmful to soil life as early as the 1994-1995 vintage, reintroducing scarification, ploughing, and compost applications. François continues this direction with trials in organic farming starting in 2009, then rolling it out across the entire estate in 2013; the 2023 vintage marks the announced organic certification. A new vat room, designed to precisely control the journey of the grapes and wines, entered service in 2020.
Les Pitures
The site corresponds to the climat officially named "Pitures Dessus", often commercially abbreviated as "Les Pitures" or "Pitures". It is located mid-slope, near the village of Volnay in the direction of Pommard, and adjoins the Clos des Ducs. Its clay-limestone and marly soil shows variations between hard limestone and marly limestone; granular facies of the Calcaire de Nantoux, locally dolomitized, are reported in this sector. The climat produces exclusively red Volnay Premier Cru.

- Subsoil and geology

Histoire de la parcelle
The site has been documented since 1507 under the name "En la Peture" in the land register of the royal domain, formerly a ducal domain, of Beaune, Pommard, and Volnay. The Archives Départementales de la Côte-d’Or explicitly identify this historical denomination with the current climat Pitures Dessus. The site is now listed among the climats of Volnay officially classified as Premier Cru.
