Les Horées
Les Horées is a Burgundian wine estate and micro-negociant founded by Catharina and Guilhem Sadde, based in Beaune. Catharina Sadde manages the vineyards and winemaking using an uncertified organic and biodynamic approach, featuring native yeast fermentations, measured use of sulfur, and a variable proportion of whole clusters for the reds. The estate works its own parcels and completes its range with grapes purchased from long-term partner growers.

Histoire du domaine
Of German origin and initially trained as a chef, Catharina Sadde turned to wine after a harvest experience in the Nahe region. She studied viticulture and oenology in Geisenheim and Montpellier, then trained at several Burgundian estates, notably Domaine de la Romanée-Conti, Comte Armand, Domaine Comte Georges de Vogüé, Marquis d'Angerville, and Cécile Tremblay. She met Guilhem Sadde, then an auctioneer, in 2010 during an internship at Pablo Chevrot. The couple founded Les Horées in 2019 and produced their first vintage that year, representing around 7,000 bottles. Initially located in rented premises in Pommard, the estate later transferred its production to a larger winery in Beaune. The project combines winegrowing ownership and micro-negociant activity: Catharina Sadde recently stated that she farms 4.1 hectares and has established lasting relationships with several grape suppliers. The name Les Horées refers to the Horae of Greek mythology, deities associated with the rhythm and changing of the seasons.
En Coulezain
En Coulezain is a cadastral lieu-dit in the commune of Volnay, distinct from the Volnay Premier Cru classified climats. It is located in the lower and eastern part of the communal vineyard and can produce wines under regional appellations, notably Bourgogne Aligoté and Bourgogne Côte d’Or. However, the cuvée Les Horées « En Coulezain » is not an expression exclusively from this lieu-dit: professional sources indicate that it combines vines from Volnay with very old vines from Pommard. The context "Beaune Premier Cru blanc" provided in the database therefore does not correspond to the documented geographical and regulatory status of the site.
