Domaine Dauvissat Chablis La Forest 2005 Bottle (75cl) ELA
The 2005 Domaine Dauvissat Chablis La Forest is a white Burgundy wine made from 100% Chardonnay, classified as Chablis Premier Cru. This cuvée comes from the La Forest climat, also known as Forêts, attached to the flagship Montmains climat on the left bank of the Serein. Facing south-east, this sector rests on shallow Kimmeridgian marls, covered with stony and clayey soils. The 2005 vintage thus combines the identity of Chablis Chardonnay with the expression of a Premier Cru from La Forest.

Histoire du domaine
The estate in question is Domaine Vincent Dauvissat, a producer of Chablis whose origins date back to the 1930s. Robert Dauvissat began bottling his own wines – rather than selling his entire harvest to wine merchants – from a one-hectare plot situated in the Les Clos and La Forest climats. In 1950, his son René and his wife Madeleine took over the estate. They gradually expanded the vineyard through the purchase and lease of plots, notably in the grands crus Les Clos and Les Preuses, as well as in the premiers crus La Forest and Séchet. Vincent Dauvissat joined his parents in the late 1970s. He took over the management of the estate when they retired in 1989. The estate has been using biodynamic methods in the vineyards since 2002. Ghislain and Étiennette Dauvissat now work alongside their father and are involved in both the management of the vineyards and the winemaking process. Some of the family’s vineyards may also be labelled as ‘Dauvissat-Camus’, Camus being the maiden name of Vincent Dauvissat’s mother.
La Forest
La Forest corresponds to the climat officially named 'Forêts', located on the left bank of the Serein in the commune of Chablis. Facing southeast, it features a rather flat lower slope and a steep upper section. Its shallow, stony, and clayey soils rest at a shallow depth on a Kimmeridgian marl slab rich in small oyster fossils. Forêts is part of the group of Premiers Crus that can be marketed under the flagship climat Montmains.

Histoire de la parcelle
A forest formerly occupied the climat before it was cleared and planted with vines. The spelling 'forest' is documented in 1367, by which time vines had already replaced the forest cover. The cadastral climat 'Les Forêts', section E2 of Chablis, is among the names officially classified as Premier Cru and belongs to the Montmains–Forêts–Butteaux group.
